Day 6 was a Monday after a very full weekend and to be honest, I didn’t want to do anything. But, I decided to make a new dish for dinner as something new that I am trying along with something I enjoy – cooking. My roommate and I made Honey Garlic Cauliflower with fried rice and it was pretty yummy. As I am slowly transitioning to a plant-based diet, we used flax egg instead of real eggs as the binder for the breadcrumbs to the cauliflower. It worked but not phenomenally well so I am still looking for an egg substitute. I really like fried or battered food because I like the crunch but I want to be able to make it 100% plant-based. If anyone has any suggestions, leave them in the comments below! I would love to have some help finding egg substitutes.
I almost forgot to take a photo of the food yesterday so I snapped a photo real quick right before I put it away. But, I remembered to take a photo so I am proud of myself. Small steps lead to big changes. Anyways, have a great Tuesday!
